How to Enjoy

1. Thaw slowly in the refrigerator.
2. For suyuk, simmer in water with scallion, onion, garlic and doenjang until cooked through to the center. For roasting, sear in a pan, then finish slowly in the oven—adjust time to thickness and appliance and check the center.
3. Rest briefly, then slice and serve with kimchi and lettuce wraps. You can also thaw, slice and grill—cook fully through.
